The fileja i casa are born from the simplicity of the mixture of water and durum wheat semolina.
Fileja are the typical pasta of my city, Vibo Valentia.
In ancient times it was kneaded by the expert hands of our grandmothers, cut into loaves of about 8 centimeters and rolled up on a wooden stick called "dinacu". It is the protagonist pasta of Calabrian Sundays.
Today, bronze drawing and slow drying at low temperatures guarantee a roughness that facilitates the absorption of the sauce and other condiments.
