Alcohol content: 12.5% vol
Vinification and Aging: cold maceration for about 24h, following the soft pressing, the must, at low temperature, remains to decant for 48h; the clear part starts the fermentation in 50hl steel tanks at a controlled temperature, by indigenous yeasts. Alcoholic fermentation carried out at controlled temperature, refermentation and aging in autoclave charmant method for about 6/8 months and then in the bottle.
